An ancient custom dictates that the walnuts needed for this liqueur must be harvested on 24 June, the feast day of St John the Baptist. The unripe walnuts are crushed together with their husks and left to macerate in the distillate with wine and sugar. After a long period, the liqueur is filtered and left to “rest” for about a year.
